Signs of Underwatering Plants in a San Francisco Garden

A gray, damp-feeling morning tells you the garden is fine. Six inches down, the root zone often says something else entirely.

A San Francisco July morning shows up gray, cool, and damp enough that dragging out the hose feels faintly absurd. The deck rail is wet. The air reads like rain just stopped. So the watering gets skipped, and two weeks later the lettuce tastes bitter, the chard is crisping along its edges, and the squash has quietly stopped setting fruit. Most signs of underwatering in this city trace back to one honest mistake: reading the weather instead of reading the soil.

Why fog fools you

Fog does two things to a garden, and neither of them is watering it. It blocks sunlight, and it keeps the air humid. Both slow the rate at which a plant pulls water out of the soil, which is genuinely helpful. Neither puts water where roots can reach it.

What the fog also brings is wind, and wind is the part gardeners underestimate. A steady afternoon breeze off the ocean strips moisture from leaf surfaces and from the top of an exposed bed faster than a still, sunny day in a sheltered courtyard would. Windy days sit alongside midsummer heat as the conditions that push containers to needing water every single day. A cool, gray, windy Tuesday in the Outer Sunset is a drying day, even though nothing about it feels like one.

Then there's what's under the bed. Much of the city's west side sits on old dune sand, which holds far less water per inch of depth than a loam and lets an irrigation drain past the root zone quickly. That soil difference has real consequences: blossom end rot, a disorder driven by water balance in the plant, is more common on sandier soils and gets worse when soil moisture runs low.

The signs of underwatering

The reassuring thing is that plants announce thirst well before they die of it. You just have to know the order the announcements come in.

Dull, gray-green, small foliage. This is the earliest and most-missed sign. Before anything wilts, leaves under too little water may look smaller than normal, brittle, folded, misshapen, or dull gray-green. A swiss chard plant that has lost its glossy, deep-green sheen and gone matte and bluish is already rationing.

Wilting that doesn't reset overnight. This is the useful distinction. A big-leafed plant like summer squash can flag at three in the afternoon simply because it can't move water up as fast as it's losing it, then stand back up by dark. That plant is coping. A plant still limp at seven the next morning, after a full cool night, is genuinely short of water in the root zone.

Crisping and browning along leaf edges. Margins go dry, papery, and tan while the center of the leaf stays green. On lettuce and spinach the same stress shows up as tipburn, a browning necrosis that traces back to calcium moving too slowly through a dry plant. The fix is short and specific: keep the water steady and don't let the plant run dry between drinks.

Dropped flowers and fruit. A plant short on water sheds what it can't finance. Bush beans drop blossoms when soil moisture runs low, and the fix is simply not letting the soil dry out too far between irrigations. On tomatoes and peppers, a root zone that swings between bone-dry and soaked produces sunken, leathery brown-to-black lesions at the blossom end of the fruit.

Small, tough, bitter harvests. Cucumbers need even watering to avoid bitterness, and extreme dry conditions head the list of causes of bitter cucurbit fruit, alongside overwatered soil and poor fertility. A dry spell writes itself into the flavor.

Bolting greens, with an asterisk. Worth being precise here: bolting is triggered by temperature and day length, not by thirst, so a lettuce sending up a flower stalk is not proof you underwatered. But the same stressed, dry plant gives you a smaller and sharper-tasting head on its way there. If greens keep bolting on you, that's a timing question the planting calendar answers better than the hose does.

Water that vanishes or runs off. When a container mix dries out completely it turns hydrophobic, and water may run straight through the pot without wetting the soil at all. In a bed, the tell is water pooling and sheeting off rather than soaking in. Either way, the plant got nothing.

Wilting cuts both ways

One caution before you reach for the hose. Drowned roots wilt too. Roots need oxygen, and soil kept saturated suffocates them, so a badly overwatered plant droops in a way that looks identical from six feet away. The leaf never tells you which one you have. The soil always does. If your moisture check comes back dark, heavy, and wet, you're looking at the opposite problem, and the signs of overwatering are a different post.

Check before you water

Here's the whole trick, and it takes about fifteen seconds.

For a container, stick a finger into the top inch of mix. If it feels dry, water until some runs out the bottom. For a bed, one inch is not nearly deep enough. Use a small trowel or a soil probe to dig down 6 to 8 inches and look at the moisture at the bottom of the hole.

Damp soil at depth is cool, darker than the surface, holds its shape when you squeeze a handful, and leaves a smudge on your palm. Dry soil is lighter in color, crumbles apart, and leaves your hand clean. Dry sand practically pours.

This is where the fog belt gets people. Overnight condensation and a humid marine layer can leave the top inch of a bed convincingly moist while the soil at six inches is dust. The surface is the one part of the profile the weather can fake. Watering it alone doesn't help either: if you only keep the surface of the soil moist, most of that water evaporates into the air.

Root zone: the depth of soil a given crop's roots actually occupy. Shallow-rooted crops like lettuce, onion, and radish work the top 6 to 12 inches; beans, cucumber, and pepper the top 1 to 2 feet; tomato the top 2 to 4 feet. Water that stops short of the bottom of that zone hasn't done its job.

How to water deeply

Deeply, and less often. That's the whole shift. Wet the soil to just beyond the bottom of the root system each time you water, and plan on irrigating a vegetable bed one to three times a week in summer, once or twice a week or less in other seasons. A daily two-minute sprinkle keeps the top inch wet and trains roots to stay up there, where the next windy afternoon will find them.

Mulch is the cheapest move available. A layer over the soil significantly reduces the rate of water loss, which matters most on the sandy, wind-scoured side of town. Two inches of compost or straw over an open bed buys back a lot of what the ocean breeze takes.

Water early in the day, at the soil line rather than over the foliage. Fog-belt nights are damp enough on their own; leaves that go into one already wet are an invitation to powdery and downy mildew, which is a much easier problem to avoid than to cure.

And if a pot has gone hydrophobic, don't just splash it. Soak the whole container or leave a slow drip running on it until the mix rewets.

Containers and beds

Containers dry out first, always. They hold a fixed, small volume of mix with air on every side, and the deeper-rooted crops feel it hardest. A shallow pot suits lettuce, which is content in 6 to 10 inches of soil, but tomatoes and summer squash want 18 to 24 inches of depth before they stop running dry every afternoon. Undersize the pot and you've signed up for daily watering all season.

The bigger surprise is that the foggy block does not automatically need less water than the sunny one. In the Mission, Bernal Heights, or SoMa, a July bed sees real sun and warmth and lands at the frequent end of that one-to-three-times-a-week range. In the Outer Sunset or Richmond, lower evaporative demand pushes the other way, but wind and fast-draining dune sand claw much of it back. Two gardens four miles apart can land on the same schedule for opposite reasons, which is why the trowel beats the rule of thumb every time.

Read the soil

Fog is genuinely good news for a San Francisco food garden. It's why greens hold, why brassicas last, why a cool summer grows a better head of lettuce here than a hot one does almost anywhere. It just isn't rain. Get in the habit of putting a trowel into the bed once a week, before the first dull gray-green leaf shows up, and the gray morning stops being a reason to skip the hose and starts being just weather.
